Raj Kachori is a delicious Chat from Rajasthan which is a spicy chaat bowl filled with delicious fillings of potato, curd, chutney, sev and sprout. It has refreshing flavors and makes for a unique food experience. Served as a snack or appetizer, Raj Kachories make a beautiful presentation and are thoroughly enjoyed by just about everyone.
Ingredients to make Kachori
2 cups Sooji ( Semolina)
2 tbsp Maida( All Purpose Floor)
1/4 tsp baking soda
Oil and Salt to taste

for Stuffing Kachori
Chopped Boiled potato ( 1 cup)
Boiled Red Chana Daal ( 1 cup)
Small Papdi- 1 packet
Pudina Chutney 1 cup
1 cup sweet Tamarind Chutney
Roasted Cumin and Red Chjilli Powder- 2 tbsp
Curd - 400 gms. (2 cup) (whisked)
Sev bhuiya – 1 cup
Coriander leaves - 1/2 cup (chopped)
2 to 3 green chilies chopped
sugar as needed
How To Prepare Raj Kachori
Boil potatoes and cut it into cubes. Boil the
soaked channa.Sieve the sooji and maida in a bowl and add salt, ¼ tsp baking
soda in it. Mix the ingredients well and knead the flour with water. Cover the
dough with a wet cloth and leave it for half an hour. Make sure not to leave
the dough uncovered or else it will be dry and kachori will not puff up
properly.
Heat oil in a pan. Take a small portion of the
dough and roll it with hands into a round ball. Now roll it into a round Poori
shape.
Put this kachori into the pan and fry it in the
oil. Press the kachori so it rises well. As soon as the kachori rises, lower
down the flame and fry till it turns brown in colour. Take out the kachori on a
plate and prepare rest of the kachoris in the same manner. Let it
cool down.
Take one
Kachori and make a small opening in the centre to put the ingredients
into it. Keep the kachori on a plate. Put 4-5 pieces of potatoes, 1 spoon boild
red channa, 2-3 papadi, roasted cumin and red chilli powder, sweet
chutney, curd, green chutney, sev bhujiya, coriander leaves, curd mixed with sugar and chutney.
