Chilli Garlic Noodles is a delicious Asian recipe served as a Main dish having amazing garlicky
flavors. Chili oil is an important flavoring agent while cooked Chinese food.
This dish is a simple to make dish, noodles infused with garlic and chili
essence. If you are not in the mood for making something elaborate, then this
Chilli garlic noodles is the right choice for a quickie meal which can be eaten
on its own or served with Manchurian or Chilly chicken or a schezuan sauce. But these noodles taste just as nice when eaten as it is.
INGREDIENTS
I packet Noodles of your choice
1/2 cup Chilli Garlic sauce
1 tbsp Chilli Oil
2 tbsp refined Oil
A few Sprig of green onions
15 to 20 Whole Kashmiri Red
Chilies
1 cup Oil
Break the Whole dry Red Chilies into pieces. Heat the oil to smoking point, add the chillies and cover and switch off the gas.Keep aside till the oil cools down completely. Discard the Red chillies and Strain and store the oil in a bottle. Use as required.
PROCEDURE FOR MAKING CHILLI GARLIC SAUCE:
10 nos of red chilli
5 to 6 pods of garlic
1 tbsp vinegar
salt
1 tsp cornflour
5 to 6 pods of garlic
1 tbsp vinegar

1 tsp cornflour
Grind all the ingredients together except the cornflour and keep aside.In a pan add chilli garlic paste,
add water to thin the consistency and when it starts boiling
add the corn flour paste and stir continuously to avoid lumps. Stir till thick,
cool and store or use immediately as preferred.
PROCEDURE FOR MAKING CHILLI GARLIC NOODLES:
Cook the noodles in boiling water with a tsp of oil. Add cold water to the cooked noodles and drain it. Separate the noodles by applying oil in fingers and keep aside.
Heat oil in a thick bottomed pan. Add the spring onions, noodles and chilli garlic sauce and cook on a high flame for 3 to 4 minutes.
Sprinkle a pinch of salt and stir fry at high heat for about 4 minutes. Pour the chilli oil on top and toss.
Serve hot.
