From the lap of Punjab, comes this aromatic dish called Paneer Makhni
,otherwise known as Butter Paneer which uses the most loved ingredient of the
Punjabi people…..BUTTER .. The Makhani Gravy is usually made up of pureed tomatoes, ginger, garlic, red chili powder
and cream. Soft paneer chunks are added to
the rich tomato based gravy. Paneer
makhani gets a little bit of tangy taste from tomatoes and there are whole
spices and garam masala in it .
INGREDIENTS:
250gms Paneer cut into cubes
4 to 5 medium size ripe tomatoes pureed
2 to 3 tbsp Fresh cream
3 tbsp Butter
1 tsp Ginger Garlic Paste
1 Bay Leaf
1/ 2 tsp Red Chilli Powder
1 to 2 Green Chillies Slit
1/4 tsp Garam Masala powder
1 tsp Sugar
1/2 inch Ginger Julienne
1/2 tsp Kasoori Methi
Water as needed
Salt to taste
HOW TO DO IT:
Chop the tomatoes and make a smooth puree in the blender. Keep Aside.
Melt butter in a pan,add bay leaf and saute for a few seconds.
Add the Ginger Garlic Paste and saute for a minute. Blend in the tomato puree and stir well.Add Chilli Powder and stir on a slow flame.
Pour in some water, green chillies, and ginger Julianne. Stir and let the tomatoes cook till the raw smell of the tomatoes disappear and oil starts to come out of the gravy.
Add Paneer cubes, sugar,salt and crushed kasoori methi, half cup water and let them cook for a minute or two.
Lastly add the fresh cream and gently stir.
Garnish with fresh coriander and Serve Hot with Roti, Naan or Rice.
