DRY MANGO RAITA( AMBULA RAI)

Ambula Rai is a traditional and delicious Odia recipe that is extremely popular among all generations. Its a classic khatta or odia style chutney or raita..It is served as a side dish. It’s a dish which reminds me of temple food preparation and it is very easy to prepare.
Ambula is Dried raw mango . During summer raw mangoes are cut into half or quarter and are mixed with salt and sun dried till they are completely dry and are used in various dishes as a souring agent.

INGREDIENTS:
  • 4 to 6 nos of Dry Mango Slices( Ambula)
  • 2 tbsp of mustard seeds
  • 2 nos of green chillies
  • 500 gms of Plain thick curd 
  • 2 to 3 tbsp sugar
  • A tbsp of coriander leaves
  • A cup of grated coconut

How to prepare Ambula Rai:

  1. 1. Soak the mustrad seeds along with green chillies for half and hour so that it can be easily made into a smooth paste.




2. Soak the ambula pieces in water for minimum 1 to 2 hours so that it can be softened.


3. After 2 hours , the ambula must have been soft so that you can scrap the soft flesh out of it or you can cut into small pieces.


 

4. Now take the curd in a bowl.


5. Add sugar, mustard chilli paste, grated coconut and dry mango(ambula)  to it.





6. Whisk it well so that it all mixes well.



7. Garnish with Coriander.




NB; You dont have to add salt here as the dry mangoes are itself salty.
