PANEER VEGETABLE JALFREZI

               Paneer Vegetable Jalfrezi is a colorful and nutritious curry prepared with mixed vegetables and paneer. Jalfrezi is a cooking method where the curry is prepared in a saucy base.It goes very well with rotis, parathas, naan  and kulchas. To make a perfect jalfrezi, you have to see that the vegetables added to the curry retains its crunch.



INGREDIENTS:
1 cup paneer cubes
1 medium capsicum cut into long strips
5 to 6 french beans cut into long strips
1 carrot cut into long strips
2 medium potatoes cut into long strips
2 to 3 nos of tomatoes pureed
1 thinly sliced onion
1 tbsp ginger garlic paste                                   
1/2 tsp kalonji( Onion seeds)
1/2 tsp cumin seeds
1 tsp red  chilli powder
1tbsp coriander powder
1 tsp cumin powder
1/2 tsp turmeric powder
2 tbsp charmagaz 1 green cardamom     
1 inch cinnamon
salt
1tsp garam masala
1tsp kasoori methi
3 tbsp oil
1 tbsp sugar


How to prepare Paneer vegetable Jalfrezi:

1. Soak the charmagaz with green cardamom, cinamon, and grind to a fine paste.


                          

2.Heat oil in a pan and fry the vegetables for 2 to 3 minutes and make sure that it is still crunchy. Slightly fry the paneer and keep aside.


                            



                             


3. In the same pan, add the cumin seeds and kalonji. When it sizzle, add sliced onions. 



                            

4.When the onion turns slightly brown , add ginger garlic paste and fry for a minute. Then add charmagaz paste, turmeric powder, chilli powder, coriander powder, cumin powder, tomato pure and cook till oil comes out from the masala.

 


                                                                               

                             

5. Now, add carrots, potatoes, capsicum, french beans, salt and cook with water till they are cooked.

                                          

6.Add the Paneer, sugar  and  mix well. Cook for  a minute or till the desired consistency of the gravy of your choice is achieved.





7. Add  Kasoori methi by crushing it between your palms. 


8. Add garam masala and switch off the gas .



9. Serve with Roti, naan, kulcha or Parathas.
