SOOJI KA HALWA
Ingredients
·         2 cups Semolina(sooji)
·         4 cups water 
·         A thick pinch of saffron dissolved in 2 tbsp warm water
·         2 tbsp ghee
·         1 cups sugar
·         2 tbsp cashew nuts and raisins
·         2 to 3 cardamom pods crushed
Instructions
·   Heat  a pan and roast the semolina( sooji) for on a low flame. Keep on stirring in between so that the semolina does not burn and gets a uniform color. keep aside.
·   Soak saffron in 2 tbsp war water.
·    In another pan boil water and sugar till the sugar dissolves completely and keep aside.
·    in a kadai, melt ghee. fry cashewnuts and raisins in the ghee till golden brown and  add the roasted semolina and mix it with the ghee.Mix everything well and after 2-3 minutes add the crushed cardamom.
·   Add the hot sugar water and the saffron water  to the semolina slowly and gradually.keep on stirring while adding the sugar solution so that no lumps are formed.
·         Stir the whole mixture very well and let the suji halwa cook for 5-6 minutes more.
·         serve suji halwa hot.
