PUNJABI STYLE  GRAVY CHICKEN


Ingredients:

  • 500gms chicken 
  • 2 nos of tomatoes finely chopped
  • 1 onion finely chopped and 1 onion made into paste
  • 1 tbsp ginger garlic paste 
  • 1/2 tsp red chilli powder/ paste
  • 1 tsp coriander powder, 1/2 tsp turmeric powder dissolved in water.1 bay leaf
  • 2 nos of green cardamom
  • 2 stick cinnamon
  • 1/2 tsp cumin seeds
  • 1/2 tsp garam masala
  • 1 tbsp coriander chopped
  • 3 tbsp of Oil
  • 1 tbsp lemon juice
  • salt

Process to prepare Punjabi style chicken 

1.Clean the chicken pieces in running water and drain.add 1 tbsp lemon juice, salt and keep aside for 30 minute.
2.Heat Oil in a pan,add green cardamom, black cardamom, cinnamon, bay leaf and cumin seeds. 
3. when they crackle, add ginger garlic paste and fry for a minute. Add onion paste and cook for another one minute. 
4. Now, add, coriander - turmeric paste, red chilli paste,salt  and  and cook till oil starts to separate from the masala. 
5. Now add the marinated chicken pieces and cook on slow heat till oil starts to separate. 
6. Now, add finely chopped tomatoes, chopped onions and 1 cup of water and let the chicken comes to a boil. Cover and cook till the chicken is almost done.
7. Now remove the chicken pieces from the gravy and pass the gravy through a soup strainer. Collect the liquid and keep aside.
8.Grind the solids to a smooth paste.transfer the chicken pieces to the gravy. 
9.now, heat the pan once again and cook the chicken gravy paste with 1 to 2 tbsp of strained liquid for 1 to 2 minutes. Add garam masala and chopped coriander leaves and serve hot.
