SOOJI KA HALWA
Ingredients
· 2
cups Semolina(sooji)
· 4
cups water
· A
thick pinch of saffron dissolved in 2 tbsp warm water
· 2
tbsp ghee
· 1
cups sugar
· 2
tbsp cashew nuts and raisins
· 2 to 3
cardamom pods crushed
Instructions
· Heat a pan
and roast the semolina( sooji) for on a low flame. Keep on stirring in between
so that the semolina does not burn and gets a uniform color. keep aside.
· Soak saffron in 2
tbsp war water.
· In another pan boil
water and sugar till the sugar dissolves completely and keep aside.
· in a kadai, melt
ghee. fry cashewnuts and raisins in the ghee till golden brown and add
the roasted semolina and mix it with the ghee.Mix everything well and after 2-3
minutes add the crushed cardamom.
· Add the hot sugar water
and the saffron water to the semolina
slowly and gradually.keep on stirring while adding the sugar solution so that
no lumps are formed.

Stir the whole mixture
very well and let the suji halwa cook for 5-6 minutes more.
·
serve suji halwa hot.
