Honey Cinnamon Cake
A "cake" born out of my love for pancakes with honey and cinnamon . The "cake" isn't overly sweet, and is surprisingly moist , a fact that I attribute to the addition of the cinnamon.This cake is divine! It taste like a mixture of a moist honey bun and a moist cinnamon strudel. I can't have enough of this cake. It was delicious! Simple, quick and easy ingredients. You have to give it a try to experience the melt in the mouth magic of this cake.
Ingredients:
1/2 cup honey
1/2 cup thick yogurt
1/2 cup oil
1 tsp vanilla essence
1-1/2 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
A pinch of salt
1/2 tsp cinnamon powder
1 tsp golden raisins
1 tsp golden raisins
How to do
Preheat the Microwave oven on convention mode to 160 degrees. Grease and flour a pan and keep aside.
Combine the wet ingredients in a bowl and mix with a whisk till well incorporated. Mix all the dry ingredients in another dry bowl till well incorporated. Slowly transfer the dry ingredients into the wet mixture and mix till well incorporated.
Transfer the mixture into the greased pan and level the top with a spatula. Bake for 40-45 minutes till a toothpick pricked in the center comes out clean.
Cool in the pan for 10 minutes, transfer to a wire rack to cool completely.

Oh it does indeed show your love for honey and cinnamon as you have made a supremely soft moist and truly melting with every bite cake. I can visually envisage how delectable it must have tasted and can imagine how fabulous the aromas would have swirled around your house when it lay in the oven baking. Truly wonderful my dear.
